M is for .... mould.
They're called "moule" in French.
"Moulé à la louche", means moulded by hand,
when they ladle the cheese mixture into the moulds.
The cheese becomes solid as the liquid drains through the holes,
and the cheese takes the form of the mould.
These are old cheese moulds I saw at the Livarot Cheese factory.
The little heart shaped moulds are for "Coeur de Neufchâtel",
a creamy white heart shaped cheese from Neufchâtel.
